Chick Pea Burgers
Chick Pea Burgers. Makes around 6 medium to large patties.
Ingredients: 3 cans of chick peas (which are also called garbanzo beans) 1 small white onion, 1 spicy pepper (i forget the kind I used, it was from my dad's garden, and it was skinny and red if that helps), 2-3 garlic nubs, 2 eggs, bread crumbs (2 slices of toast chopped up) and salt and pepper to taste.
First, finely chop the onion and garlic. Take the seeds and "veins" (gross, right?) out the the pepper and chop him up too. In a blender or food processor blend together 2 cans of rinsed chick peas, eggs, onion, garlic, and the pepper. You don't need to liquefy it, just blend it together. Pour this mixture into a bowl and add in the remaining can of rinsed and roughly chopped chickpeas, bread crumbs, and salt and pepper to taste. Mix together by hand and then divide and shape into patties. I don't use all of them at once so I wrap them in plastic wrap and freeze them until I am hungry.
I really love reading this blog (she's a vegetarian too!) because it is so hard studying and trying to come up with yummy and exciting things to make. I'm getting better and more confident in the kitchen, my main issue is making sure we eat enough greens!!! (oh, look at me. I sound like a nana already).
